Mediterranean vegetable Shakshuka
Ingredients Serves: 6 people
Shakshuka spice blend
- 3 tablespoons of granulated sugar
- 1 tablespoon ground cumin
- 1 tablespoon of smoked paprika
- 2 teaspoons Black peppercorns
- 2 teaspoons of whole cumin seeds, grated in a mortar
- 1 tsp.Garlic granulated
- 1 teaspoon Turmeric
- 1/2 teaspoon chili
- 1/2 teaspoon Cinnamon
Mediterranean Vegetable Shakshuka:
- 1 tablespoon of olive oil
- 1 small onion, finely diced
- 1 tsp.Garlic granulated
- 250 g of eggplant, diced
- 250 g zucchini, diced
- 1 teaspoon Sea salt
- 1 teaspoon Dill
- 1/2 teaspoon of fennel seeds, grinded in a mortar
- 400 g canned chopped tomatoes
- 6 eggs
- 1 tablespoon flat-leaf parsley
A method of preparing

Thoroughly mix all spices in a small bowl. Set aside. Heat the oil in a large cast iron skillet over medium heat. Add the onion and fry, stirring until transparent, it will take about 5 minutes. Add the garlic and continue to fry while stirring. Add eggplant and zucchini and continue to stir, fry for 10-15 minutes until the vegetables are tender. Turn down the fire.
Add 1 tablespoon of Shakshuka spice mixture, salt, dill, ground dill, mix the vegetables and cover. Increase the fire. Add tomatoes, stir for 3-5 minutes until the sauce thickens. Reduce heat to low, spoon 6 holes into sauce. Pound the eggs into them and cover with a lid. Fry for 10-15 minutes (10 minutes if you prefer liquid yolks, 15 minutes - cut yolks). If desired, you can fry on a hot grill and sprinkle with parsley. Serve with crispy slices of bread.

Store the remnants of the spice mixture in an airtight jar in a cool, dry place. Use the rest of the mixture to prepare the Shakshuka dish or create your own composition.
