Mediterranean vegetable Shakshuka

Ingredients Serves: 6 people

Shakshuka spice blend

  • 3 tablespoons of granulated sugar
  • 1 tablespoon ground cumin
  • 1 tablespoon of smoked paprika
  • 2 teaspoons Black peppercorns
  • 2 teaspoons of whole cumin seeds, grated in a mortar
  • 1 tsp.Garlic granulated
  • 1 teaspoon Turmeric
  • 1/2 teaspoon chili
  • 1/2 teaspoon Cinnamon

Mediterranean Vegetable Shakshuka:

  • 1 tablespoon of olive oil
  • 1 small onion, finely diced
  • 1 tsp.Garlic granulated
  • 250 g of eggplant, diced
  • 250 g zucchini, diced
  • 1 teaspoon Sea salt
  • 1 teaspoon Dill
  • 1/2 teaspoon of fennel seeds, grinded in a mortar
  • 400 g canned chopped tomatoes
  • 6 eggs
  • 1 tablespoon flat-leaf parsley

A method of preparing

Thoroughly mix all spices in a small bowl. Set aside. Heat the oil in a large cast iron skillet over medium heat. Add the onion and fry, stirring until transparent, it will take about 5 minutes. Add the garlic and continue to fry while stirring. Add eggplant and zucchini and continue to stir, fry for 10-15 minutes until the vegetables are tender. Turn down the fire.

Add 1 tablespoon of Shakshuka spice mixture, salt, dill, ground dill, mix the vegetables and cover. Increase the fire. Add tomatoes, stir for 3-5 minutes until the sauce thickens. Reduce heat to low, spoon 6 holes into sauce. Pound the eggs into them and cover with a lid. Fry for 10-15 minutes (10 minutes if you prefer liquid yolks, 15 minutes - cut yolks). If desired, you can fry on a hot grill and sprinkle with parsley. Serve with crispy slices of bread.

Cooking Tips

Shakshuka Spice Blend is an aromatic combination of cumin, smoked paprika, black pepper, cumin, garlic, turmeric, cinnamon and red pepper. It is a favorite blend of spices throughout North Africa and the Middle East and is gaining more and more popularity around the world.

Store the remnants of the spice mixture in an airtight jar in a cool, dry place. Use the rest of the mixture to prepare the Shakshuka dish or create your own composition.
