- First, the chocolate producers mix milk powder and sugar and carefully stir both into cocoa mass and cocoa powder. The mix is dried, creating a coarse powder of milk chocolate.
- The milk chocolate owes its fine taste and soft texture to the subsequent conching process, in which all ingredients are mixed together. With the conching process, the chocolatier is following a long-standing tradition.
- At the beginning of the process the temperature is kept low. Only when the ingredients are mixed is the temperature slowly increased so that moisture can slowly be extracted from the mix and new aromas can develop.
The fine taste of milk chocolate
Milk chocolate gets its delicate, creamy taste from the careful mixing of the individual ingredients.
While milk chocolate and dark chocolate both contain cocoa mass, cocoa butter and sugar, adding powdered milk gives the former a smooth taste, a fine texture and a lighter color.
