What is dark chocolate?
Dark chocolate is considered to be particularly noble among the types of chocolate. This is mainly due to their high cocoa content. This gives it a particularly strong, aromatic taste.
What is dark chocolate made of?
Dark chocolate is usually made up of powdered cocoa mass, sugar, cocoa butter, and powdered milk. We use 70% cocoa for our full-bodied temptation. This is how the chocolate gets its typically intense taste.
How is dark chocolate made?
The production of dark chocolate requires the greatest care. In order for it to develop its intense chocolate taste, it is made with a higher proportion of cocoa. Conching is particularly important in production. This is the name given to the traditional finishing process.
What does conching mean?
When conching, the various chocolate ingredients are mixed together. The temperature is gradually increased in order to remove moisture from the chocolate mass. Cocoa and sugar have to be mixed long enough so that the chocolate aromas develop completely and a fine and smooth consistency can be guaranteed.
