Roasted veal in thyme with nuts and raisins served with egg, chives and horseradish salad

Ingredients :

  • leg of veal 800 g

Marinate :

  • rapeseed oil 2 tbsp
  • honey 2 tbsp
  • dry fruits 100 grams
  • Dried thyme 1 tbsp

Egg salad:

  • egg 4 pieces
  • shallot 2 pieces
  • chive a few twigs
  • Mayonnaise 1 tbsp
  • grated horseradish 1 tbsp
  • Salt to taste
  • Herb pepper to taste

A method of preparing

Place the washed, cleaned and dried meat in an ovenproof dish. Marinate thoroughly in oil, honey and spices, then cover with dried fruit. Cover the dish and put it in the fridge for about 8 hours. Bake the prepared veal for about an hour at 180 C.

Prepare all the ingredients for the salad. Hard-boil the eggs. Peel the onion and chop it. Wash the chives and chop them as well. Put all the ingredients for the salad in a bowl, season to taste with salt and pepper.

The finished veal is removed from the oven and cut into slices. Serve with dried fruit and egg salad.

For the recipe, we suggest using a mixture of dried fruits consisting of: apricots, figs, apples and cranberries.
