Tarragon
Tarragon is made of the dried leaves of a plant grown in temperate and Mediterranean climates. It has a specific sweetish smell and a slightly bitter taste. The French call him the king of spices. Tarragon can be used in place of salt because it gives food a salty taste but does not increase blood pressure. It should be added to dishes at the end of cooking. Uses of tarragon: For white meats, cottage cheese, stuffing, and herb butter as well as for vegetables, sauces (e.g. for tartar sauce). It is an indispensable component of vegetable silage. It improves the taste and gives the pickled cucumbers firmness and durability.

Thyme
Thyme tastes great with meat dishes, spicy sauces, heavy soups (pea, bean soup), fish, roasted duck and venison. You can season it with cold cuts, bigos, minced meat, pates, cheese, lettuce, vegetables and pizzas. It neutralizes the smell of fish. It goes well with garlic, onions and parsley.
